Savory One-Pot Wonder: A Brunch Showstopper

To start, heat 2 tablespoons of vegetable oil in a large cast-iron skillet or non-stick frying pan over medium-high heat. Add 1 pound of small red-skinned potatoes, cut into wedges, and 3 tablespoons of water. Quickly cover the pan to let the potatoes steam and soften for about 8 minutes. When the potatoes and kielbasa are dark golden brown, remove the pan from the heat and add the dressing, tossing to coat. Finally, add 2 cups of baby spinach and cook, stirring only as needed, until it has barely wilted.
