In the heart of Persian cuisine lies a deep appreciation for fragrant flavors and exquisite presentation. One such delicacy is the sweet and tangy rose petal jam, a staple in many Iranian households.

Gathering Ingredients

To create this delightful jam, you’ll need:

  • 1 pound fresh or 2 cups dried rose petals
  • 1/4 cup lime juice
  • 2 1/2 cups sugar
  • 2 cups water
  • 1 cup slivered pistachios
  • 2 tablespoons rose water (optional)

Preparing the Rose Petals

Begin by selecting fresh pink rose petals, cutting off the white ends, and washing them carefully to remove any pesticide residue. Soak the petals in cool water for 15 minutes, then drain. If using dried rose petals, simply boil them in water, drain, and sprinkle with 1 tablespoon lime juice.

Crafting the Jam

In a large pot, combine sugar and water, bringing the mixture to a boil. Reduce the heat and let simmer for 35 minutes, or until the syrup thickens. Add the remaining lime juice, rose petals, slivered pistachios, and rose water (if using), mixing well. Cover and simmer for an additional 20 minutes, or until the syrup sticks to the back of a spoon. Remove from heat and let cool.

Preserving the Jam

Sterilize jelly jars in boiling water, then fill them with the hot jam and seal. Store the jars in a cool, dark place, ready to be enjoyed with loved ones.
