The Magic of Miso

Miso, a fermented Japanese staple, is the key to unlocking the flavor of radishes. With its rich, savory taste, miso adds depth and umami to our dish. You can find miso paste in most grocery stores, and it comes in two main varieties: white miso, with a sweet and mild flavor, and red miso, with a salty and savory flavor.

Gather Your Ingredients

For this recipe, you’ll need:

  • 2 tablespoons unsalted butter
  • 2 tablespoons red miso paste
  • 1/4 teaspoon togarashi powder
  • 3 bunches medium radishes with their tops
  • 2 tablespoons vegetable oil
  • Kosher salt
  • 2 tablespoons water
  • 1/4 teaspoon rice vinegar

Let’s Get Cooking!

Start by preparing your miso-butter mixture. In a small bowl, mash together the butter, miso, and togarashi until well combined. Set it aside for now.

Next, separate the radish tops from the roots. Chop, wash, and dry the tops, then set them aside. Wash and trim the radishes, halving or quartering them depending on their size.

Heat the oil in a large frying pan over medium-high heat. Add the radishes, arranging them cut-side down in a single layer. Season with salt and sear until golden brown, about 4-5 minutes. Flip and cook the other side until crispy and tender, about 3-5 minutes more.

The Finishing Touches

Reduce the heat to medium and add the radish tops, 1 tablespoon of water, and salt to taste. Cook, tossing occasionally, until the tops are completely wilted, about 2 minutes.

Remove the pan from the heat and stir in the miso-butter mixture and remaining water until the butter melts and coats the radishes and tops. Add the vinegar and stir to combine. Taste and season with salt as needed.
