The Perfect Bite
Our updated tea sandwiches yield 16 delicious bites, perfect for your next gathering. With a total preparation time of just 35 minutes, you can easily impress your guests without breaking a sweat. And the best part? This recipe is incredibly easy to make.
Gather Your Ingredients
- 1/2 medium English cucumber (about 8 ounces)
- 1 teaspoon kosher salt, plus more as needed
- 1 1/2 medium lemons
- 8 slices nutty oat bread
- 1 cup hummus
- Freshly ground black pepper
Prepare Your Ingredients
To start, slice the cucumber into paper-thin rounds using a mandoline or very sharp knife. Place the slices in a colander or sieve set over a bowl, sprinkling them with kosher salt and tossing to combine. Let them drain for 15 to 20 minutes.
Meanwhile, slice the lemons into paper-thin rounds, removing any seeds as you go. Set them aside for later use.
Assemble the Sandwiches
Using a rolling pin, flatten each slice of bread to half its original thickness. Spread 2 tablespoons of hummus evenly on one side of each slice, seasoning with salt and pepper to taste. Set aside.
Once the cucumbers are ready, lightly blot them with paper towels to remove excess moisture. Shingle the cucumber slices over the hummus on four slices of bread, followed by a layer of lemon slices. Close the sandwiches with the remaining slices of bread, trimming the crusts and making two diagonal cuts to form four triangles.
Pair with a Refreshing Beverage
For the perfect pairing, try Voss Sauvignon Blanc from Napa. The wine’s well-defined flavors of lime, melon, and grass complement the sharp, refreshing flavors in the sandwich, while its crispness and creaminess mirror the textures of the oat bread and hummus. Cheers!
