Easy to Prepare, Yet Packed with Flavor

This recipe yields two servings and can be prepared in just one hour, with only 25 minutes of active cooking time. The result is a dish that’s both easy to make and bursting with flavor.

The Essential Ingredients

To create this culinary masterpiece, you’ll need the following ingredients:

  • 1 yellow onion
  • 3 garlic cloves, divided
  • 6 sun-dried tomatoes
  • 1 1/2 ounces kalamata olives
  • 2 tablespoons capers
  • 1/16 bunch basil
  • 1/16 bunch flat-leaf parsley, divided
  • 12 ounces Yukon Gold potatoes
  • 2 fillets Pacific cod
  • 3 tablespoons olive oil
  • 1/4 cup white wine
  • 1/8 teaspoon red pepper flakes (optional)
  • Kosher salt
  • Black pepper

Roasting the Potatoes to Perfection

Preheat your oven to 425°F. Peel the onion and thinly slice it, then mince the garlic. Roughly chop the sun-dried tomatoes, olives, and capers. Rinse the basil and parsley, discarding the stems, and roughly chop the leaves. Quarter the potatoes and toss them with 1 tablespoon of olive oil, half of the garlic, half of the parsley, salt, and black pepper on a baking sheet. Arrange the potatoes in a single layer and roast until golden brown and tender, about 20 minutes.

Cooking the Cod and Sauce

While the potatoes are cooking, heat 1 tablespoon of olive oil in a large pan over medium heat. Add the sliced onion and cook until soft and translucent, about 5 minutes. Then, add the sun-dried tomatoes, olives, capers, and remaining garlic, cooking until the garlic is golden, 1 to 2 minutes. Add the white wine and red pepper flakes (if using), cooking until reduced by half, 1 minute. Transfer the sauce to a bowl and set it aside.

Seasoning and Cooking the Cod

Season the cod fillets on both sides with salt and pepper. Add 1 tablespoon of olive oil to the pan from the sauce over medium heat. When the oil is shimmering, add the cod and cook until golden on the outside and cooked through, about 3 minutes per side. Add the sauce and basil, warming through for about 1 minute. Taste and adjust the seasoning as needed.

The Final Touches
