Savory Shrimp Linguine with Spicy Chorizo Sauce

A Match Made in Heaven: Shrimp and Sausage Unite

When it comes to combining flavors, few pairings are as divine as shrimp and sausage. Add some spicy chorizo to the mix, and you’ve got a dish that’s sure to tantalize your taste buds.

The Perfect Protein

For this recipe, you’ll need 1 pound of medium-sized shrimp, shelled and ready to go. Don’t forget to season them with coarse salt and freshly ground black pepper before adding them to the sauce.

Spicy Chorizo Sauce: The Star of the Show

Heat 3 tablespoons of olive oil in a large skillet over medium-high heat until it shimmers. Then, add 1/4 pound of chopped chorizo or andouille sausage and cook for a couple of minutes, until it’s fragrant and just starting to brown. Stir in 1 minced garlic clove and cook for another 30 seconds, until it’s fragrant. Next, add 2 large ripe tomatoes (about 1 1/4 pounds), seeded and chopped, along with salt, pepper, and a pinch of crushed red pepper. Cook for about 2 minutes, until the tomatoes release their juices.

Linguine: The Perfect Pasta

While the sauce is simmering, cook 1 pound of linguine in a large pot of boiling, salted water until it’s just shy of al dente. Reserve about a cup of pasta water before draining the linguine.

Bringing it All Together

Add the shrimp to the sauce and crank up the heat to high. Then, add the cooked linguine to the sauce, tossing everything together and adding pasta water as needed. Finally, drizzle in 1 to 2 tablespoons of olive oil and toss in 1/3 cup of chopped fresh flat-leaf parsley and chives. Serve immediately and enjoy!
