Cretons, a traditional Quebecois delicacy, remains a mystery to many outside of the province. Yet, this rich and flavorful pork spread has been a staple in Quebec households for generations. In fact, French-New Englanders affectionately refer to it as “gorton” or “corton.” So, what makes cretons so special?
A Taste of France in Canada
Cretons share a similar recipe with French rillettes, but their essence is more akin to pâté. Typically served on bread or toast, cretons are a popular breakfast item in Quebec. However, they’re also enjoyed as a satisfying snack in rural areas.
A Recipe Worth Sharing
Yielding 4-5 portions, this recipe requires a total of 1 hour and 15 minutes of active time. Gather the following ingredients:
- 1 kg (2 1/4 lb.) mild fatty bacon, cut into cubes
- Salt and pepper to taste
- 1 kg (2 1/4 lb.) lean pork, cubed
- 1 tsp. poultry seasoning
- 1 onion, diced
- 3 cloves of garlic
- 2 bay leaves
- 250 ml (1 cup) boiling water
The Preparation Process
Phase 1: Rendering the Fat
- Remove the membrane from the fat and cut it into small pieces.
- Melt the fat over medium heat, stirring frequently to prevent sticking.
- Once the fat no longer releases water and the remaining meat bits are golden brown, pour it through a fine strainer and chop the meat with a knife.
Phase 2: Blending the Flavors
- Grind the pork through a meat grinder and cook it with the chopped onion and water, stirring constantly at the beginning.
- After 30 minutes, add the remaining meat bits from the rendered fat, salt, pepper, and spices. Let it simmer for 15-20 minutes over low heat.
- Pack the mixture into molds, adding a little rendered fat as desired.
- Let it cool before serving.
