Gather Your Ingredients
Before you start cooking, make sure you have the following ingredients on hand:
- 1 lb. ground lamb or lean ground beef
- 1 medium leek, chopped
- 1 garlic clove, finely chopped
- 1/2 cup beef broth
- 1 TB chopped fresh dill weed or 1 tsp. dried
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 3 cups (3 medium) potatoes, cut into 1/4″ pieces
- 1 dried bay leaf
- 1 cup small tomatoes, coarsely chopped
Brown the Meat and Cook the Vegetables
In a 10″ skillet, cook the lamb or beef, leek, and garlic over medium heat, stirring frequently, until the meat is browned. Drain the excess fat from the skillet.
Add the Remaining Ingredients
Next, stir in the beef broth, dill weed, salt, and pepper. Add the chopped potatoes and bay leaf to the skillet, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Simmer for about 12 minutes, or until the potatoes are tender, stirring occasionally.
Add a Burst of Fresh Flavor
Remove the bay leaf from the skillet and stir in the coarsely chopped tomatoes. Heat the stew through, allowing the flavors to meld together.
