Watercress Walnut Pesto: A Tasty Twist on a Classic
When it comes to pesto, most people think of basil and pine nuts. But what if I told you there’s a game-changing alternative that’s just as delicious? Enter watercress walnut pesto, a flavorful and refreshing twist on the classic recipe.
The Perfect Combo
This pesto is a match made in heaven, with the peppery taste of watercress paired with the richness of walnuts. And the best part? It’s incredibly easy to make, requiring only 5 minutes of active time and a handful of ingredients.
Gather Your Ingredients
To get started, you’ll need:
- 1 bunch of watercress (about 2 1/2 ounces, including stems)
- 5 tablespoons of freshly squeezed lemon juice
- 2 tablespoons of balsamic vinegar
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of walnut pieces
- 1/2 cup of extra-virgin olive oil
- 4 garlic cloves, peeled but whole
- 1 teaspoon of kosher salt
Blend to Perfection
Combine all the ingredients in a food processor and blend for 30 seconds. Use a spatula to scrape down the sides of the bowl, then blend for an additional 30 seconds. That’s it!
Serve and Enjoy
Transfer your pesto to a serving bowl or store it in an airtight container in the fridge for up to 3 days. Enjoy it on pizza, pasta, or straight from a spoon – my 2-year-old daughter’s favorite way to eat it!
Tips and Variations
Feel free to customize your pesto to your liking by adding other ingredients, such as diced onions or sun-dried tomatoes. You can also use it as a dip for veggies or as a sauce for grilled meats or fish. The possibilities are endless!
