Quick and Easy Recipe

Ingredients:
- 12 Brussels sprouts
- 2 cloves finely minced garlic
- 2 shallots or 1/2 medium chopped onion
- 3 tablespoons grape seed oil (or any vegetable oil)
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon curry powder
- 3 tablespoons cream or coconut milk (optional)
Instructions:
Preparation is Key
Cut the Brussels sprouts into quarters or halves, separating the cut sections from the loose leaves. Prepare a bowl of ice water and bring a pot of water to a boil.
Blanch and Shock
Add the larger sections of Brussels sprouts to the boiling water first, blanching for just 3-5 seconds. Immediately add the loose leaves, stir once, and then drain the sprouts into the ice bath. Once cooled, remove and blot dry with paper towels.
Sauté to Perfection
Heat a pan, adding oil, minced garlic, and shallots. Let them brown, then add the Brussels sprouts, tossing to combine with the garlic and shallots. Add soy sauce, salt, and curry powder, and toss again. Cook for only about 1 minute, being careful not to overcook.
Creamy Option
For an extra-rich flavor, add 3 tablespoons of coconut milk and cook for an additional 30 seconds. Remove from heat and enjoy!
