Traditionally, skewers like these use goat or lamb fat tissue to bind the mixture together. However, by substituting breadcrumbs and whisked eggs, we can create a lighter, yet equally delicious, alternative. This innovative approach reduces the richness while adding a delightful texture.
Gather Your Ingredients
- 300g lean minced goat or beef
- Flat bamboo skewers (soaked in water beforehand)
- 1 cup breadcrumbs
- 2 tbsp coriander seeds (toasted until fragrant)
- 6 cloves garlic
- 1/4 tsp cumin (toasted until fragrant)
- 3 pinches of sugar
- 2 tbsp tamarind
- Pinch of salt and maggi
Assemble and Grill
Combine the processed ingredients with the minced meat, then wrap 1 tbsp of the mixture onto the bamboo skewers, shaping them into ovals. Set them aside until you’re ready to grill. Once cooked through, serve hot with steaming rice and a side of spicy soy sauce for dipping.
