- 7 oz veal stock
- 1 1/2 oz olive oil
- 1/2 oz Arborio rice
- 1/8 oz dried porcini
- Leaves from 1 thyme sprig

- Salt
- 2 oz heavy cream
- 1 1/2 lb veal tenderloin
- 4 oz chipollini onions, brunoise
- 2 oz butter
- 6 oz cremini mushrooms, brunoise
- 2 oz parmesan
- 4 egg yolks in half shells
Preparing the Risotto Cream
Heat the veal stock and reserve. In a saucepan, heat 1/3 of the olive oil over medium heat, add the rice, and stir for 1 minute. Add 1/3 of the veal stock, dried porcini, thyme, pepper, and salt, and cook until the liquid is fully absorbed, stirring constantly. Repeat this process until all the liquid is absorbed, then remove from heat, cover, and let rest for 10 minutes.
Blending the Risotto
Transfer the risotto to a blender, add the heavy cream, remaining olive oil, and veal stock, and process until smooth. Pass through a chinois, transfer to a plastic container, and refrigerate.
