A Simple yet Impressive Recipe
This easy-to-make recipe yields about 8 cups (2 quarts) of pink lemonade and requires just 35 minutes of active time and about an hour of cooling time.
Raspberry Syrup
To make the raspberry syrup:
- Combine 3/4 cup of fresh raspberries, 1 cup of granulated sugar, and 2/3 cup of water in a small saucepan.
- Bring to a boil over medium-high heat, stirring occasionally until the sugar has dissolved.
- Reduce the heat to low and simmer for 10-12 minutes, or until the raspberries start to fall apart.
Strain and Cool
Meanwhile:
- Place a fine-mesh strainer over a medium heatproof bowl.
- Pour the raspberry mixture through the strainer and gently push on the solids to release all of the liquid.
- Discard the solids and let the syrup cool slightly, about 15 minutes.
- Refrigerate uncovered until cold, about 30 minutes more.
Lemonade Time
To make the lemonade:
- Place the cooled raspberry syrup in a pitcher.
- Add 6 cups of cold water and 1 cup of freshly squeezed lemon juice.
- Stir to combine and refrigerate until ready to serve.
- To serve, pour over ice and garnish with lemon slices or fresh raspberries, if desired.
