Elegant Filet Mignon with Red Wine and Wild Mushroom Sauce
A Romantic Dinner for Two
This indulgent dish is perfect for a special occasion or a cozy night in with your loved one. With tender filet mignon, rich red wine, and earthy wild mushrooms, this recipe is sure to impress.
Preparation is Key
To ensure a tender and juicy filet, remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature. Meanwhile, prepare the mushroom mixture by melting 2 tablespoons of unsalted butter in a frying pan. Add 2 cups of roughly chopped wild mushrooms and 2 thinly sliced shallots, seasoning with a sprinkle of kosher salt and freshly ground black pepper. Sauté until the mushrooms are browned and tender, about 7 minutes. Set aside to await the main event.
Searing the Steaks
Preheat your oven to 425°F. Pat the filets dry with paper towels and season with plenty of salt and pepper. Heat a large cast-iron frying pan over high heat for about 5 minutes. When the pan is scorching hot, add a drizzle of olive oil and then the steaks. Sear for about 4 minutes on one side, then flip and sear for another 2 minutes. Transfer the steaks to the oven to roast until cooked to your desired level of doneness.
The Perfect Doneness
Cooking time will depend on the thickness of the steak. For rare, aim for an internal temperature of 120°F, while medium-rare is achieved at 125°F. Once cooked, transfer the steaks to a platter, cover tightly with aluminum foil, and let rest for 5 to 10 minutes.
Finishing Touches
While the steaks are resting, return the frying pan with the mushroom mixture to the stovetop. Add 1/2 cup of dry full-bodied red wine and simmer until reduced by half. Stir in the remaining 2 tablespoons of unsalted butter. Serve the filets with the rich mushroom sauce spooned over the top, and enjoy a truly unforgettable dining experience.
