Rich, Cream-Filled Chocolate Donuts Recipe
The Perfect Treat
Imagine sinking your teeth into a soft, fluffy donut filled with velvety vanilla custard and coated in a rich, dark chocolate glaze. With this recipe, you can turn that dream into a reality.
Getting Started
To create these decadent treats, start by preparing the dough for basic yeast donuts. Once the dough has risen, cut out circles, let them rise again, and fry them to perfection.
The Filling
The filling is where the magic happens. Combine:
- heavy cream
- whole milk
- granulated sugar
- a pinch of fine sea salt
in a saucepan. Warm the mixture over medium-low heat, stirring to dissolve the sugar. In a separate bowl, whisk together:
- egg yolks
- sugar
- cornstarch mixture
Slowly pour the warm cream mixture into the yolk mixture, whisking constantly. Return the mixture to the saucepan and cook until thickened and glossy. Remove from heat, stir in:
- vanilla extract
- butter until melted
and let cool completely.
Assembling the Donuts
Once the filling is chilled, it’s time to assemble the donuts. Cut out a small opening in the side of each donut round, forming a cavity. Fill a piping bag with the chilled pastry cream and pipe a few tablespoons into each donut round.
The Glaze
The final touch is the rich, dark chocolate glaze. Whisk together:
- powdered sugar
- cocoa powder
- salt
Slowly add:
- milk
- vanilla
whisking until smooth. Cover with plastic wrap until ready to use.
Finishing Touches
Glaze the filled donuts and transfer to a rack to let the glaze set. Your indulgent treats are now ready to be devoured!
Tips and Tricks
- Plan to finish the donuts within 1 hour of making the chocolate glaze, as it can easily become too stiff to coat.
- Use a smooth-sided biscuit cutter measuring 2 1/2 to 3 inches in diameter and a pastry bag fitted with a small tip.
