A Royal Dish Fit for a King

Yuk Hoe, a traditional Korean dish, is believed to have originated in the Joseon Royal Court. Legend has it that this savory delight was initially made with ox or horse meat, instead of beef. Today, we’ll explore a modern twist on this beloved recipe.

Servings and Prep Time

This recipe yields 4 servings and requires a moderate level of difficulty. With a total prep time of 20 minutes, you’ll be indulging in this Korean delicacy in no time.

Gather Your Ingredients

To create this mouthwatering dish, you’ll need the following ingredients:

  • 1 pound tender beef (choose your favorite cut)
  • 1 Bae (Nashi or Asian) pear
  • 4 egg yolks
  • 3 tablespoons pine nuts
  • 3 green or spring onions
  • Pear wash (1 cup water, 1 tablespoon salt)
  • Seasoning mixture (see below)

Seasoning Mixture

Combine the following ingredients to create the perfect seasoning blend:

  • 4 tablespoons soy sauce
  • 2 tablespoons sugar
  • 5 cloves fresh garlic
  • 2 1/2 teaspoons toasted sesame seeds
  • 2 tablespoons sesame oil
  • 1/2 teaspoon freshly-ground black pepper

Preparing the Ingredients

Before assembling the dish, prepare each ingredient as follows:

  • Beef: Partially freeze the beef to aid in cutting. Slice into 1/8 inch thick slices, then cut each slice into 1/8 inch thick by 1 1/2 inch long strips.
  • Green Onion: Trim the root and rinse in cold water. Cut the green stalks from the onions and sliver from top to bottom. Fine chop the white portion.
  • Pine Nuts: Fine chop the pine nuts.
  • Bae (Nashi) Pear: Peel and quarter the pear from top to bottom, removing the seed core. Slice very thin, rinse in the pear wash, and drain.
  • Garlic: Mince or press the garlic cloves.

Assembling the Dish

Now it’s time to bring everything together:

  • Mix the seasoning ingredients in a bowl. Add the beef and green onion, mixing well.
  • Divide into 4 portions and place in a mound on serving plates. Make a small depression in the center of each beef mound and place one egg yolk.
  • Place slices of pear on each serving plate next to the beef. Serve with white rice and ban chan.
