Savory Cauliflower and Chickpea Curry with Crispy Tofu

A Flavorful Vegetarian Main Dish

This recipe combines the rich flavors of cauliflower, chickpeas, and crispy tofu in a harmonious blend of spices and textures, inspired by the culinary expertise of renowned Indian cook and scholar Niloufer King.

Preparation Essentials

Before starting, prepare the garam masala and steamed white or brown rice, which will serve as the perfect accompaniment to this dish.

The Perfect Balance of Flavors

In a large frying pan, heat 2 tablespoons of oil over medium heat until shimmering. Add 1/2 teaspoon of fennel seeds and toast, stirring, until fragrant, about 1 minute. Then, add:

  • 1 small yellow onion, finely chopped
  • 2 tablespoons of peeled, grated fresh ginger
  • 2 medium garlic cloves, minced to a paste

Cook, stirring and scraping the bottom of the pan, until browned, about 10 minutes.

Adding Depth and Heat

Next, add:

  • 1 teaspoon of garam masala
  • 1/2 teaspoon of turmeric
  • 1/8 teaspoon of cayenne pepper
  • a large pinch of salt

Meanwhile, prepare the tofu by:

  1. placing it on paper towels
  2. patting it dry
  3. seasoning it with salt and pepper
  4. tossing the tofu in 1/2 cup of all-purpose flour until coated

Heat 2 tablespoons of oil in a second large frying pan over medium-high heat until shimmering. Add the tofu, tapping off any excess flour first, and brown on all sides, being careful of splattering oil, about 9 minutes.

The Final Touches

When the cauliflower is ready, gently fold in:

  • the crispy tofu
  • 1 large handful of coarsely chopped cilantro
  • 2 tablespoons of freshly squeezed lime juice

Serve immediately with steamed rice, yogurt, naan, or chapati, if desired.
