Yields: 8-10 servings
Difficulty: Easy
Total Time: 1 hour 40 minutes

Gather Your Ingredients

  • 1 large egg
  • 3/4 cup water
  • 3 cups all-purpose flour
  • 4 tablespoons unsalted butter, at room temperature
  • 2 teaspoons kosher salt
  • 1 teaspoon granulated sugar
  • 2 1/4 teaspoons coarsely ground black pepper

Let’s Get Started

Begin by whisking together the egg and water until well combined. Set aside for now. Preheat your oven to 400°F and position the rack in the middle.

Mixing the Dough

In a stand mixer fitted with a paddle attachment, combine flour, butter, salt, and sugar. Mix on low speed until the ingredients resemble cornmeal, about 2 minutes. Add the egg mixture and mix on medium-low speed until just incorporated.

Chilling the Dough

Divide the dough into three pieces, shape into flat disks, and cover each with plastic wrap. Refrigerate for at least 30 minutes to allow the dough to relax.

Rolling Out the Dough

Place one dough piece on a lightly floured surface and roll out into a paper-thin sheet, about 1/16 inch thick. Try to match the dimensions of your baking sheet.

Adding the Finishing Touches

Place the dough on an ungreased baking sheet and sprinkle with 3/4 teaspoon of the coarsely ground black pepper. Press the pepper into the lavash and bake until golden brown and crispy, about 18 minutes. Repeat with the remaining dough pieces.

Serve and Enjoy

Once baked, transfer the lavash to a wire rack to cool. Serve warm or at room temperature, paired with your favorite dips and spreads.
