Refreshing Tabouli Recipe: A Burst of Middle Eastern Flavors

The Perfect Blend of Ingredients

- 3 tablespoons of fine bulgur
- 3 medium firm, ripe tomatoes, diced
- 2 green onions, sliced thin
- 14 ounces of flat-leaf parsley, leaves and small stems, washed and dried well
- 2 cups of fresh mint leaves, washed and dried well
- A pinch of ground cinnamon, allspice, and black pepper
- Kosher salt to taste
- Juice of 1 lemon
- 2/3 cup of extra-virgin olive oil
- 4 heads of Little Gem or butter lettuce, washed and quartered
Preparing the Bulgur
Begin by rinsing the bulgur in several changes of cold water. Drain well and transfer it to a medium bowl. Periodically stir the bulgur with a fork to help it fluff up.
