Summer Refreshment in a Glass
Don’t Let That Watermelon Go to Waste!
We’ve all been there – buying a massive summer watermelon, only to struggle to finish it before it ends up in the compost bin. But fear not! We’ve got a clever solution to make the most of your melon leftovers.
Introducing the Watermelon Beer Cooler
This refreshing cocktail is specifically designed to use up your excess watermelon. By blending it with a hint of cherry liqueur and topping it off with a crisp white beer, you’ll create a drink that screams summer.
The Essential Ingredients
For this recipe, you’ll need:
- 1 (6-pound) seedless watermelon, rind removed and diced
- 2 tablespoons granulated sugar
- 1/4 cup maraschino liqueur (preferably Luxardo)
- 4 (12-ounce) bottles white beer, such as Hoegaarden, chilled
A Simple yet Effective Process
To create this delicious drink, follow these easy steps:
Step 1: Extract the Juice
Set a fine-mesh strainer over a large bowl and blend half of the watermelon until liquified. Pour the mixture through the strainer, scraping the inside surface to extract as much juice as possible. Discard the pulp and repeat with the remaining watermelon. You should end up with around 6 cups of juice.
Step 2: Add Sugar and Chill
Add the sugar to the juice and stir until dissolved. Refrigerate the mixture for at least 1 1/2 hours, or until ready to serve.
Step 3: Assemble and Enjoy
When ready to serve, transfer the chilled juice to a 3-quart container. Add the maraschino liqueur and beer, stirring gently to combine.
With this refreshing cocktail, you’ll be making the most of your summer watermelon and enjoying a taste of the season in every glass. Cheers!
