To begin, combine:
- 2 cups of water
- 1/2 cup of coconut sugar
in a saucepan, bringing the mixture to a boil. Remove from heat, then add:
- 15-20 fresh mint leaves
to the water. Let the mixture steep for 20-30 minutes, allowing the flavors to meld together. Next, transfer the sugar water and mint to a bowl, adding:
- the juice of 2 limes
- 1/4 cup of light or dark rum
Stir well to combine.
Freezing and Enjoying
Pour the mixture into ice pop molds, filling them to the brim. Add:
- 1-2 mint leaves
