Mint to Be: Refreshing Mojito Ice Pops for Summer

Elevate Your Summer with Refreshing Mint Mojito Ice Pops

A Twist on the Classic

Inspired by the timeless mojito, we’ve created a healthier, more grown-up version that’s sure to impress. By substituting coconut sugar for refined sugar and adding a splash of rum, we’ve crafted a delightful treat that’s both revitalizing and indulgent.

Crafting the Perfect Blend

To begin, combine:

  • 2 cups of water
  • 1/2 cup of coconut sugar

in a saucepan, bringing the mixture to a boil. Remove from heat, then add:

  • 15-20 fresh mint leaves

to the water. Let the mixture steep for 20-30 minutes, allowing the flavors to meld together. Next, transfer the sugar water and mint to a bowl, adding:

  • the juice of 2 limes
  • 1/4 cup of light or dark rum

Stir well to combine.

Freezing and Enjoying

Pour the mixture into ice pop molds, filling them to the brim. Add:

  • 1-2 mint leaves

to each mold, then seal and place in the freezer for at least 3 hours or overnight. Once frozen, enjoy your boozy pops as a refreshing treat on their own or add them to your favorite cocktail for an extra kick.
