No-Bake Pumpkin Spice Tarts Recipe

Adapted from Detoxinista, this recipe yields 8 servings and is ready in just 20 minutes.

Ingredients:

  • 2 cups of your favorite granola
  • 1 cup pumpkin puree
  • 1/4 cup almond milk
  • 1/4 cup melted coconut oil
  • 3/4 cup pitted Medjool dates
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons pumpkin pie spice

Directions:

  1. Prepare the Muffin Tin: Line a standard muffin tin with 8 parchment cups and sprinkle enough granola in each cup to cover the bottom. Set aside.
  2. Blend the Batter: Combine all remaining ingredients in a blender and blend until completely smooth.
  3. Fill and Freeze: Pour the batter evenly into the 8 cups. Smooth the tops so they freeze evenly.
  4. Chill and Serve: Freeze tarts for 4-6 hours until set completely. Remove from tin and serve!
