No-Bake Pumpkin Spice Tarts Recipe
Adapted from Detoxinista, this recipe yields 8 servings and is ready in just 20 minutes.
Ingredients:
- 2 cups of your favorite granola
- 1 cup pumpkin puree
- 1/4 cup almond milk
- 1/4 cup melted coconut oil
- 3/4 cup pitted Medjool dates
- 1 teaspoon vanilla
- 1 1/2 teaspoons pumpkin pie spice
Directions:
- Prepare the Muffin Tin: Line a standard muffin tin with 8 parchment cups and sprinkle enough granola in each cup to cover the bottom. Set aside.
- Blend the Batter: Combine all remaining ingredients in a blender and blend until completely smooth.
- Fill and Freeze: Pour the batter evenly into the 8 cups. Smooth the tops so they freeze evenly.
- Chill and Serve: Freeze tarts for 4-6 hours until set completely. Remove from tin and serve!
