To create this delicious mezze, you’ll need the following ingredients:

  • 1 yellow onion, chopped
  • 1/4 red bell pepper, chopped
  • 1/2 cups chopped red cabbage
  • 1/4 cup plus 1 tablespoon olive oil
  • 2 heads garlic
  • 16 ounces frozen edamame, thawed
  • Handful fresh dill, plus more for garnish
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon sweet paprika
  • 2 tablespoons water

Roasting to Perfection

Preheat your oven to 375 degrees Fahrenheit. Next, place the chopped onion, red bell pepper, and cabbage on a sheet of aluminum foil, drizzling lightly with 1/2 tablespoon olive oil. On a separate sheet, chop the top off the garlic heads, exposing the cloves, and drizzle with another 1/2 tablespoon olive oil. Wrap the foil around the vegetables and garlic, and bake for 30 minutes.

Blending it All Together
