The Perfect Blend of Flavors
To create this delicious mezze, you’ll need the following ingredients:
- 1 yellow onion, chopped
- 1/4 red bell pepper, chopped
- 1/2 cups chopped red cabbage
- 1/4 cup plus 1 tablespoon olive oil
- 2 heads garlic
- 16 ounces frozen edamame, thawed
- Handful fresh dill, plus more for garnish
- 1 lemon, juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon sweet paprika
- 2 tablespoons water
Roasting to Perfection
Preheat your oven to 375 degrees Fahrenheit. Next, place the chopped onion, red bell pepper, and cabbage on a sheet of aluminum foil, drizzling lightly with 1/2 tablespoon olive oil. On a separate sheet, chop the top off the garlic heads, exposing the cloves, and drizzle with another 1/2 tablespoon olive oil.
