  • 1 large yellow onion, diced
  • 1/2 pound breakfast or Italian sausage, removed from the casing
  • 4 cups spinach leaves, washed and drained (about 6 ounces or 1 large bunch)
  • 2 1/2 cups milk
  • 8 large eggs, lightly beaten
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon sea salt

Easy Prep and Baking

  1. Butter a 9 × 13-inch glass baking dish.
  2. Melt the butter in a large skillet over medium heat and cook the onion until soft and translucent.
  3. Add the sausage, breaking it up as it cooks, until it’s fully browned. Stir in the spinach and cook until wilted.
  4. In a separate bowl, whisk together the milk, eggs, mustard, salt, and pepper. Add the bread cubes and stir to coat.
  5. Combine the bread mixture with the sausage mixture, cheese, thyme, and rosemary. Pour the mixture into the prepared baking dish and refrigerate for at least an hour or overnight.
  6. When you’re ready to bake, preheat the oven to 350°F. Remove the bread pudding from the refrigerator and let it come to room temperature. Bake for 45 to 50 minutes, or until puffy and golden brown. Let it rest for 5 minutes before serving warm.
