If you’re anything like me, you can’t get enough of the creamy, green goodness that is avocado. As a long-time fan, I’ve been experimenting with different recipes to showcase its versatility. Today, I’m excited to share with you my take on the perfect avocado toast with egg.

The Ultimate Breakfast, Brunch, or Snack Recipe

This recipe has become a staple in my household, and I just can’t keep it to myself anymore! It’s quick, easy, and packed with nutritious ingredients to keep you going throughout the day.

Ingredients:

  • 2 slices of whole-wheat bread
  • 1 egg
  • 1/2 avocado
  • 1 tomato or 6 cherry tomatoes
  • Salt and black pepper to taste

Instructions:

  1. Boil and Prep: Boil an egg for 5-7 minutes while toasting two slices of bread.
  2. Slice and Scoop: Slice the tomatoes and scoop out the avocado flesh with a spoon.
  3. Assemble: Spread the avocado on toasted bread, sprinkle with salt, and top with sliced tomatoes.
  4. Add the Egg: Peel the boiled egg, cut it into pieces, and distribute them evenly on both slices of bread.
  5. Season to Taste: Add black pepper and more salt if desired.
