One of my favorite dishes to cook when I’m back home is a hearty soup or stew. There’s something comforting about a warm, flavorful bowl of goodness that brings everyone together. My go-to recipe is a classic French Coq au Vin, a rich and savory chicken and vegetable stew infused with red wine.
Coq Au Vin Recipe
This beloved dish is a masterclass in comfort food, made healthier with organic meat, fresh vegetables, and aromatic herbs. Don’t be afraid to splurge on a good bottle of red wine – it makes all the difference!
Ingredients:
- 2 tablespoons good olive oil
- 4 ounces good bacon or pancetta, diced
- 1 (4 to 5 pound) chicken, cut into 8 pieces
- 2 cups carrots, cut into 1-inch pieces
- 2 cups pearl onions, peeled
- 2 cups button mushrooms, stems removed
- 2 cloves garlic, chopped
- 1 bottle (750 ml) dry red wine, like Burgundy
- 2 cups good chicken stock, preferably homemade
- 10 fresh thyme sprigs
- 2 bay leaves
- 1 tablespoon all-purpose flour (or rice flour for gluten-free)
- 1 tablespoon brandy
- Kosher salt and freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
Instructions:
- Cook bacon in a large skillet or Dutch oven over medium heat. Drain on paper towels and reserve.
- Dust chicken with flour, salt, and pepper. Brown in the same pot, then set aside.
- Sauté garlic, onions, mushrooms, and carrots until softened. Add wine and broth, stirring to combine.
- Add herbs and cover, simmering for 1 hour or until chicken is cooked through.
- Remove chicken and add brandy, simmering uncovered until the sauce thickens.
- Serve over wild rice, garnished with fresh parsley.
