This week, we’re celebrating a small victory in our grocery haul journey. Despite previous mistakes, we managed to stay within our $25 budget. However, our haul is a bit lean, and we’ve realized that going meat-free next week might be the only way to truly maximize our budget.

As self-proclaimed carnivores, it’s tough to cut back on meat, but we know it’s essential to make our budget work. We opted for non-organic chicken this week, sacrificing quality for quantity. With two chicken-based meals planned, we needed a substantial amount of chicken to feed three people. Although we aim to limit our meat intake to 3 oz per meal, we had to make some compromises.

Smart Shopping Decisions

Our haul included a whole pineapple, iceberg lettuce, and essentials for our pita pockets. One notable item was popping corn, which deserves a shout-out. If you haven’t tried stovetop popcorn, give it a shot! It’s significantly cheaper, customizable to your taste, and much healthier than microwave options. Fresh popcorn has become a staple in our household, and for good reason.

DIY Greek Salad Pita Pockets Recipe

This week, we created a simple yet delicious DIY Greek Salad Pita Pockets recipe. By setting up a mini “bar” of ingredients, we could customize our pockets to our tastes. The best part? You can make it with whatever you have on hand, and it’s much lighter than a traditional taco bar.

Ingredients:

  • Thin pita pockets
  • Fresh mixed greens
  • Ripe tomatoes
  • Red onion
  • Kalamata olives
  • Pepperoncini
  • Chicken breast (olive oil, salt, pepper)
  • Feta
  • Cucumbers
  • Garlic hummus
  • Seasonings (balsamic, olive oil, etc)

Preparation:

  1. Sear the chicken breast in olive oil, seasoning with salt and pepper on both sides.
  2. Chop the remaining ingredients and arrange them on a cutting board with seasonings.
  3. Assemble the pockets as you go, and enjoy!
