Coral Mushroom Recipe: Elevate Your Korean Ban Chan

Unleashing the Flavor of Coral Mushrooms

When it comes to adding an extra layer of depth to your Korean ban chan array, coral mushrooms are an excellent choice. These elusive fungi can be found in the produce section of Korean or large Asian markets during their seasonal peak.

Preparing the Ingredients

To get started, you’ll need:

  • 1/4 pound of coral mushrooms
  • 2 green onions
  • 2 slices of white or yellow onion
  • 3 cloves of garlic
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 tablespoon of vegetable cooking oil
  • 1 to 2 teaspoons of pure toasted sesame oil
  • Optional: 8 ounces of your favorite beef, pork, or chicken cut

Step-by-Step Instructions

Preparation

Tear the coral mushrooms into individual stalks or small groups, depending on their size. Rinse them well in cold water, then bring a pot of water to a rapid boil. Add the mushrooms and return to a boil. Boil for 2-3 minutes, then remove from heat, drain, and rinse in cold water.

If using meat, slice it into strips similar in size to the mushroom strips. Lightly salt and pepper the meat, then let it stand for 10 minutes.

Mixing the Ingredients

Place the mushrooms in a mixing bowl and lightly sprinkle with salt and pepper. Mix well and let sit for 10 minutes. Cut the green onions into 1-inch lengths, slice the white or yellow onion into thin slices, and press or mince the garlic. Add all the ingredients to the mixing bowl, including the remaining salt and pepper, and mix well.

Cooking the Dish

Heat a small amount of vegetable cooking oil in a pan over medium-high heat for 30 seconds. If using meat, add it to the pan and cook until lightly browned. Then, add the mushroom mix and stir-fry for 4-5 minutes. Remove from heat, drizzle with pure sesame oil, and serve.

Serving Suggestions

Enjoy your coral mushroom dish as a side to any steak or main meat dish, or as part of a Korean ban chan array. The subtle flavor of the coral mushrooms pairs perfectly with the savory flavors of Korean cuisine.
