Gather Your Ingredients
To make this recipe, you’ll need:
- 2 tablespoons unsalted butter
- 1 medium pineapple, peeled, cored, and quartered lengthwise
- 2 tablespoons dark brown sugar
- 1 cinnamon stick
- 1 star anise pod
- 2 whole cloves
- 1 vanilla bean, split lengthwise, seeds scraped and reserved
- 1/3 cup dark rum
Caramelize Your Pineapple to Perfection
To start, heat your oven to 350°F. In a large frying pan, melt the butter over medium heat until it begins to foam. Add the pineapple quarters, cut side down, and cook until nicely browned. Flip and repeat until the second side is well browned.
Add Aromatic Spices and Rum
Remove the pan from the heat and add the brown sugar, cinnamon, star anise, cloves, vanilla seeds and pod, and half of the rum. Place the pan in the oven and roast for 5 minutes. Turn over the pineapple pieces and roast until the pineapple is soft and caramelized, about 5 minutes more.
Finish with a Flair
Remove the pan from the oven, add the remaining rum, and scrape to incorporate any browned bits into the liquid. Allow the mixture to cool, then remove the pineapple and slice for serving. Remove the spices and reserve the remaining sauce for drizzling over your dessert.
