Ingredients
- 6 pieces of smoked chicken, deboned and chopped (about 3 cups)
- 1 tablespoon olive oil
- 2 medium onions, sliced thin

- 2 quarts chicken broth/stock
- 1 tablespoon black pepper
- Juice from 2 limes, freshly squeezed or bottled
- 1 package Rice noodles (or 1/3 package of angel hair)
- Fresh basil, about 15-20 leaves, chopped
Instructions
- Sweat the onions in olive oil in a medium stock pot, adding diced chicken and skin, and jalapeno slices. Add salt.
- When onions and chicken start to caramelize (about 4-5 minutes), deglaze the pan with chicken broth.
- Bring the soup to a boil on medium-high heat, then shut off. Add black pepper, lime juice, and rice noodles/angel hair.
- Stir in fresh basil and serve hot!
