Reimagining a Comfort Food Classic
Who can resist the allure of chipped beef, a timeless comfort food that never goes out of style? This nostalgic dish has been a staple in many households, including mine. My mom’s version was a family favorite, and I later discovered the convenience of store-bought Stouffers brand. However, I wanted to elevate this classic by infusing it with fresh flavors and textures.

My updated version incorporates a blend of creamy cheese, sweet peas, and fragrant herbs, while maintaining the essence of the original. This hearty, easy-to-make dish is perfect for a quick weeknight dinner or a comforting weekend meal.

Ingredients:
- 8-10 oz dried beef (I used Buddig Beef)
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- Pinch of cayenne pepper
- 1/2 teaspoon Worcestershire sauce
- 3/4 cup frozen baby peas
- 1 small shallot, diced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 8 slices of provolone cheese
- 8 slices of good French or Italian bread, lightly toasted
- 1 scallion, diced (optional)
Preparing the Dish
Begin by cutting the dried beef into small pieces and dicing the shallot and scallion for garnish. Let the peas thaw at room temperature. In a medium saucepan, melt the butter over medium heat. Add the diced onion and sauté for 2 minutes until slightly soft. Then, create a roux by whisking in the flour, ensuring a smooth mixture. Gradually add the milk, whisking continuously, until well combined. Bring the mixture to medium-high heat, stirring until it thickens. Add the cayenne pepper, Worcestershire sauce, beef, peas, and parsley. Season with salt and pepper to taste.
Assembly and Serving
Toast the bread under the broiler on each side. Add a slice of provolone cheese and return under the broiler until melted. Serve two slices of cheese toast topped with the chipped beef and garnish with fresh scallions, if desired. This revamped classic is sure to become a new favorite!
