Discover the Secret to a Perfect Stir-Fry

Renowned cookbook author Grace Young shares her expertise on creating a mouthwatering beef and vegetable stir-fry dish, featuring oyster sauce and two types of ginger. This recipe is a masterclass in balancing flavors and textures, resulting in a light yet satisfying meal.

Essential Ingredients and Equipment

Before you begin, make sure you have the following ingredients and equipment:

  • Oyster sauce (choose a high-quality brand like Lee Kum Kee)
  • Pickled ginger (opt for a natural brand like Ginger People)
  • Fresh ginger
  • Flank steak
  • Sugar snap peas
  • Carrots
  • Scallions
  • Shaoxing wine or dry sherry
  • Peanut or vegetable oil
  • Kosher salt and black pepper
  • A large frying pan or wok (avoid non-stick pans)

Preparing the Beef

Cut the flank steak into 2-inch-wide strips, then slice each strip against the grain into 1/4-inch-thick pieces. In a medium bowl, combine the beef with minced fresh ginger, soy sauce, cornstarch, peanut oil, Shaoxing wine or dry sherry, kosher salt, and black pepper. Stir to evenly coat the meat and set aside.

Stir-Frying Like a Pro

Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes when dropped in the pan. Drizzle 1 tablespoon of oil around the perimeter of the wok and add the reserved beef in an even layer. Cook undisturbed for 1 minute, then stir-fry for 30 seconds until lightly browned but not cooked through. Transfer to a plate.

Adding the Vegetables

Drizzle the remaining tablespoon of oil around the perimeter of the wok and add the sugar snap peas and carrots. Stir-fry until just warmed through, about 1 minute. Return the beef and any accumulated juices to the wok, along with the reserved oyster sauce mixture, green onions, and pickled ginger. Stir-fry until the beef is just cooked through and the pickled ginger is well distributed, about 30 to 60 seconds.

Serving Suggestions

Serve this delicious stir-fry with steamed white rice, perfect as a main dish or part of a multicourse meal. Enjoy!
