The Secret to Perfectly Charred Brussels Sprouts
Our kitchen’s most popular dish is a game-changer, and it’s all thanks to a clever combination of ingredients and techniques. Every week, we sell hundreds of orders of our signature Brussels sprouts recipe, and our chefs know that the key to its success lies in the perfect balance of flavors and textures.
Selecting the Right Sprouts
When choosing Brussels sprouts, look for smaller, firmer ones that are about the size of a small marble. These will yield the best results. Be patient and let them develop a deep, caramelized crust on the cut side – it’s essential to bring out the nutty flavor that complements the sweetness of the dates and the tang of the vinegar.
A Recipe Worth Mastering
Serves 4-6 people
Ingredients:
- 3 oz bacon, cut into thin strips
- 2 Tbsp extra-virgin olive oil
- 1 lb Brussels sprouts, halved through the stem end
- Kosher salt and freshly ground black pepper
- ΒΌ cup pitted soft fresh dates
- 1 cup Chicken Stock
- 1 Tbsp plus 1 tsp red wine vinegar
The Cooking Process
Heat a large cast-iron frying pan over medium-high heat and cook the bacon until crispy, about 10 minutes. Remove the bacon from the pan, leaving the rendered fat behind. Add the Brussels sprouts to the pan, cut side down, and sear for 5-7 minutes without stirring. This will create a deep, caramelized crust.
Adding Flavor and Texture
Flip the Brussels sprouts and season with salt and pepper. Add the cooked bacon, dates, and Chicken Stock to the pan, stirring well to combine. As the sauce reduces, use a wooden spoon to break down the dates into smaller pieces. Finally, add the red wine vinegar and continue cooking until the sauce has thickened, coating the Brussels sprouts evenly.
The Perfect Finish
Transfer the Brussels sprouts to a serving platter and serve warm. The sprouts should still be bright green and slightly firm inside, with a tender bite. With this recipe, you’ll be on your way to creating a dish that’s sure to impress even the most discerning palates.
