Spicy Shrimp and Grits Recipe

The Perfect Sauce

To create the signature sauce, start by rendering the fat from 3 ounces of tasso ham or pancetta in a medium frying pan over medium heat. Once crispy, add 1/4 medium red onion and cook until softened. Next, stir in 1 tablespoon of tomato paste, 2 medium garlic cloves, 1 teaspoon curry powder, 1/2 teaspoon ground cumin, 1/4 teaspoon cayenne pepper, and 1/4 teaspoon paprika. Allow the mixture to darken and form a coating on the bottom of the pan.

Adding Depth and Flavor

Add 3 tablespoons of dry white wine to the pan, stirring occasionally, until nearly evaporated. Then, whisk in 3/4 cup of clam juice, 1/2 chicken bouillon cube, and 1/2 chipotle in adobo sauce. Bring the mixture to a simmer and cook for 2 minutes. Finally, stir in 1/3 cup of heavy cream and set the sauce aside.

Creamy Grits

In a medium saucepan, combine 1 1/2 cups of water, 3/4 cup of whole milk, 1/4 cup of heavy cream, 3 tablespoons of unsalted butter, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of freshly ground white pepper. Bring the mixture to a simmer and stir in 3/4 cup of yellow grits. Cook until the grits float to the surface, then cover and let sit for at least 10 minutes. Whisk until smooth and add more salt, white pepper, or milk as needed.

Finishing Touches

Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Add 1 (3-ounce) andouille sausage and cook until browned on all sides. Remove the sausage and set aside. Add 1 pound of medium shrimp to the pan and cook until just pink on both sides. Stir in the reserved tasso sauce and reduce the heat to low. Cook until the sauce is bubbling and the shrimp are fully cooked.

Serving

Divide the creamy grits among 4 bowls and top with the shrimp and sauce. Garnish with the reserved sausage and 1 tablespoon of finely chopped fresh chives. Enjoy your delicious spicy shrimp and grits!
