If you can’t find chayote, feel free to substitute with squash or potatoes.

This recipe serves 2-3 people and takes only 45 minutes to prepare. It’s an ideal way to showcase the flavors of chayote, paired with juicy chicken thighs and aromatic spices.

Ingredients:

  • 4 bone-in, skin-on chicken thighs (about 1 pound total)
  • 2 medium large-dice chayotes (about 1 pound)
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons dried oregano
  • 2/3 cup low-sodium chicken broth or water
  • 1/2 lemon

Preparing the Dish

In a large bowl, combine the chicken thighs and diced chayotes. Add the olive oil, salt, and pepper, and toss until evenly coated.
