Morning Nacho Madness
Are you tired of the same old breakfast routine? Look no further! Our breakfast nachos recipe is a game-changer, combining the comfort of a hearty breakfast with the convenience of a quick snack.
The Perfect Shortcut
Our recipe takes inspiration from traditional chilaquiles, but skips the tedious steps of crafting a chile sauce and frying leftover tortillas. Instead, we use store-bought tortilla chips and focus on adding flavorful ingredients like pinto beans, Mexican-style hot sauce, and melted Monterey Jack cheese.
Customize to Your Taste
Feel free to get creative with your toppings! Add some cooked Mexican chorizo for an extra boost of flavor, or sprinkle chopped cilantro on top for a fresh touch. If you prefer black beans over pinto beans, go for it! The beauty of this recipe lies in its flexibility.
Quick and Easy
This recipe is designed to be quick and easy, perfect for busy mornings or late-night cravings. With a total cooking time of just 15 minutes, you can enjoy a satisfying breakfast in no time.
What You’ll Need
- 1 (15-ounce) can pinto beans
- 1/4 cup water
- 3/4 teaspoon chili powder
- Kosher salt
- 4 large eggs
- 2 teaspoons Mexican-style hot sauce
- Freshly ground black pepper
- 1 tablespoon unsalted butter
- 1 cup grated Monterey Jack cheese
- 3 ounces tortilla chips
- 1/3 cup salsa
- Guacamole and sour cream (optional)
Let’s Get Cooking!
- Warm Up the Beans: Drain and rinse the beans, then place them in a small saucepan over medium heat. Add water, chili powder, and salt, and stir to combine. Smash about half of the beans with a fork or wooden spoon, and cook until warmed through (about 5 minutes).
- Scramble the Eggs: Beat the eggs in a medium bowl with a fork until broken up. Add hot sauce, salt, and pepper, and beat to incorporate.
- Melt the Butter: Melt the butter in a medium nonstick frying pan over medium-low heat until foamy (about 2-3 minutes). Swirl the butter to coat the pan evenly.
- Cook the Eggs: Pour in the beaten eggs and let sit undisturbed until the edges start to set (about 2 minutes). Use a rubber spatula to push the eggs from the edges into the center, and repeat every 30 seconds until just set (about 1 1/2 minutes total).
- Assemble the Nachos: Divide the tortilla chips between two large plates, and top with the warm beans. Sprinkle with remaining cheese, spoon the eggs over top, and finish with a dollop of salsa. Serve with guacamole and sour cream, if desired.
Enjoy your delicious breakfast nachos!
