Growing up during the Reagan era, I witnessed firsthand the struggles of poverty. The government’s provisions of cheese, bread, and canned goods were a staple in our household. It was a challenging time, but it also taught me the value of resourcefulness and gratitude.

This recipe is a testament to the saying “necessity is the mother of invention.” With limited ingredients, my family had to get creative with our meals. This dish was born out of that necessity, and it’s a reminder that even in difficult times, there is always something to be grateful for.

Government Cheese Frittata

Ingredients:

  • 1 slice of bacon
  • 1 small onion
  • 1 Tbsp flour
  • 1 Tbsp water
  • 1 cup shredded government cheese
  • 2 Tbsp government butter
  • 3 eggs

Instructions:

Breakfast

  1. Dice the bacon and cook until crispy.
  2. Mince the onion and sauté in the bacon fat.
  3. Add flour to make a sauce, adding water as needed.
  4. Add the shredded government cheese, which can be temperamental when cooked.
  5. In a separate pot, melt the government butter.
  6. Beat the eggs in a bowl, add to the butter, and scramble.
  7. Serve the eggs with the cheese sauce on top.

Lunchtime Variation

Use the same ingredients, minus the scrambled eggs, and add a baked potato for each child. Fluff the potatoes, layer the cheese sauce, and sprinkle with dehydrated chives for a pop of color. This simple yet satisfying meal is sure to bring smiles to the faces of your little ones.

This recipe may have been born out of hardship, but it’s a reminder that even in difficult times, there is always joy to be found in the simple things.
