The Magic of Mashed Potatoes
To start, boil 2 1/2 pounds of russet potatoes until tender, then mash them with a potato masher or ricer until smooth. While still warm, mix in 6 large egg yolks, one at a time, ensuring each yolk is fully incorporated before adding the next.
