Savory Cauliflower and Chickpea Curry with Crispy Tofu

The Perfect Balance of Flavors
In a large frying pan, heat 2 tablespoons of oil over medium heat until shimmering. Add 1/2 teaspoon of fennel seeds and toast, stirring, until fragrant, about 1 minute. Then, add 1 small yellow onion, finely chopped, 2 tablespoons of peeled, grated fresh ginger, and 2 medium garlic cloves, minced to a paste. Cook, stirring and scraping the bottom of the pan, until browned, about 10 minutes.
Adding Depth and Heat
Next, add 1 teaspoon of garam masala, 1/2 teaspoon of turmeric, 1/8 teaspoon of cayenne pepper, and a large pinch of salt. Cook, dribbling in a little water, 1 to 2 tablespoons, as you stir. This blend of spices will add depth and a touch of heat to the dish.

Add the tofu, tapping off any excess flour first, and brown on all sides, being careful of splattering oil, about 9 minutes.
The Final Touches
When the cauliflower is ready, gently fold in the crispy tofu, 1 large handful of coarsely chopped cilantro, and 2 tablespoons of freshly squeezed lime juice. Serve immediately with steamed rice, yogurt, naan, or chapati, if desired.
