What You’ll Need
To make this recipe, you’ll need a metal 9-by-5-inch loaf pan, which can be found at most cooking supply stores or large grocery stores.
Game Plan
Try using any remaining Granny Smith apples in our classic apple streusel recipe. And if you’re feeling adventurous, use the pecan streusel topping in our Peach Pie recipe for a sweet dessert treat.
Yield and Difficulty
This recipe yields one 9-inch loaf and is rated easy, with a total preparation and cooking time of 1 hour and 55 minutes.
Streusel Topping
To make the streusel topping, combine 1/4 cup packed light brown sugar, 1/4 cup finely chopped pecans, 2 tablespoons all-purpose flour, and 1 teaspoon ground cinnamon in a medium bowl. Add 2 tablespoons cold unsalted butter and, using your fingers, pinch it into the pecan mixture until only small pieces remain. Refrigerate until ready to use.
The Bread
Heat your oven to 350°F and arrange a rack in the middle. Coat a 9-by-5-inch loaf pan with butter and set aside. In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons ground cinnamon, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon ground allspice, and 1/2 teaspoon fine salt. In a separate bowl, whisk together 2 large eggs, 3/4 cup vegetable oil, 1/2 cup packed light brown sugar, 1/2 cup granulated sugar, and 1 teaspoon vanilla extract. Add the egg mixture to the flour mixture and stir until just combined. Fold in 2 cups peeled, medium-dice Granny Smith apples until evenly distributed.
Assemble and Bake
Scrape the batter into the prepared loaf pan, pushing it to the corners and smoothing the top. Remove the streusel topping from the refrigerator and sprinkle it evenly over the top, pressing it lightly into the batter. Bake for 45 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean. Let cool for 15 minutes before slicing and serving.
