The Authentic Ingredients

To create this mouthwatering dish, you’ll need:

  • 4 medium-sized green zucchinis (or substitute 2 with yellow squash for added color)
  • 5 fresh plum tomatoes, peeled and sliced into thick strips
  • 1 half of a big golden onion, chopped
  • 1 white corn, kernels only (less sweet than yellow corn, but feel free to substitute)
  • 2 poblano chiles, stemmed, peeled, veined, seeded, and cut into thin strips
  • 1 and a half cups of hot vegetable stock
  • Salt to taste
  • Corn oil: 3 tablespoons (or use a neutral-flavored extra virgin olive oil)

The Cooking Process

To bring this dish to life, follow these easy steps:

Sauté the Onion and Corn

Chop the onion and sauté it in oil for 3 minutes. Add the white corn kernels and continue cooking for a few more minutes.

Add the Tomato and Poblano

When the onion starts to become transparent, add the tomato and poblano strips. Cook together for about 5 minutes.

Add Vegetable Stock and Zucchinis

Add half a cup of vegetable stock and half a teaspoon of salt. Cook for 3 minutes. Finally, add the sliced zucchinis and the rest of the vegetable stock.

Cook to Perfection

Cook on medium flame, uncovered, until the zucchinis are tender and a little bit of the liquid has evaporated. Be careful not to overcook the zucchinis. Taste and add salt to taste.

Tips and Variations

For a thicker consistency, use 1 cup of vegetable stock total and cook on high flame for the last couple of minutes to evaporate more liquid. Experiment with different types of corn and chiles to find your perfect flavor combination.

With its rich flavors and vibrant colors, this family classic recipe is sure to become a staple in your household as well.
