  • 1 teaspoon vanilla extract
  • Pinch kosher salt
  • 1/3 cup malt powder
  • 3 graham crackers (plain, cinnamon, or chocolate covered), crumbled

Crafting the Perfect Ice Cream

To begin, combine the milk, cream, 1/4 cup of the sugar, and the vanilla bean seeds and pod (if using) in a small pan. Cook over low heat, whisking occasionally, until the mixture reaches 175°F.

Next, whisk together the egg yolks, 1/4 cup of the sugar, vanilla extract, and salt in a small metal bowl. Gradually add the warm milk mixture to the eggs, whisking constantly. Continue adding the milk mixture, 1/4 cup at a time, until you’ve added about 1 1/2 cups.

The Final Touches

Slowly whisk the egg and milk mixture back into the remaining milk mixture in the pan, cooking until it just begins to thicken or reaches 185°F. Strain the mixture into a metal bowl, discarding the solids. Gradually whisk in the malt powder, then set the mixture aside to cool to room temperature.
