Preparation is Key

To ensure a tender and juicy filet, remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.

Meanwhile, prepare the mushroom mixture by:

  • Melting 2 tablespoons of unsalted butter in a frying pan
  • Adding 2 cups of roughly chopped wild mushrooms and 2 thinly sliced shallots
  • Seasoning with a sprinkle of kosher salt and freshly ground black pepper

Sauté until the mushrooms are browned and tender, about 7 minutes. Set aside to await the main event.

Searing the Steaks

Preheat your oven to 425°F. Pat the filets dry with paper towels and season with plenty of salt and pepper.

Heat a large cast-iron frying pan over high heat for about 5 minutes. When the pan is scorching hot, add:

  • A drizzle of olive oil
  • The steaks

While the steaks are resting, return the frying pan with the mushroom mixture to the stovetop. Add:

  • 1/2 cup of dry full-bodied red wine

Simmer until reduced by half. Stir in the remaining 2 tablespoons of unsalted butter.
