Quick and Delicious Fish Curry Recipe

Essential Ingredients
- 2 lbs cod filet or Chilean seabass (halibut)
- 1-inch chunk of fresh ginger
- 2 tsp turmeric powder
- ¼ cup of vegetable oil
- 3 medium tomatoes, diced
- 3 medium onions, minced
- 5 cloves of garlic, minced
- 1 ½ inch of fresh ginger, minced
- 2 tbsp sweet paprika
- 1 tsp hot paprika or 2 fresh chile peppers
- 1 ½ tbsp fish sauce
- ¼ cup of vegetable or fish stock
- ½ cup cilantro leaves for garnish
Preparing the Fish Curry
To begin, prepare the fish by marinating it with salt, pepper, and turmeric powder for 5 minutes. This step is crucial to bring out the flavors of the dish.
Searing the Fish and Aromatics
In a large frying pan, heat the oil over medium heat. Add the onions and cook until lightly browned, then add the minced ginger and garlic until fragrant. Next, add the paprika and immediately add the marinated fish, searing it for a few minutes. Stir in the diced tomatoes and liquid stock, and cook for 5 minutes.
Finishing Touches
Lower the heat and add the fish sauce, coriander stems, and simmer for an additional 2 minutes. Finally, garnish with fresh cilantro leaves and serve hot with steamed jasmine rice.
