Tailgating Showstopper: Chipotle Skirt Steak Quesadillas

Pre-Game Prep
Before heading out to the game, season the skirt steak with chipotle peppers, salt, and pepper. Mix together the Monterey Jack and sharp cheddar cheese, and dice up some jalapeños for added heat. Don’t forget to prepare the Pickled Jalapeños, Ancho Chile Salsa, and Guacamole ahead of time – store-bought versions work too!
Grilling Perfection
Heat up your outdoor grill to high heat (around 400°F to 500°F). Pat the steak pieces dry and brush with chipotle peppers. Season both sides with salt and pepper, then throw them on the grill. Cook until medium rare, flipping halfway through, about 5-6 minutes total. Let the steak rest for 2 minutes before slicing into medium dice.
Quesadilla Assembly
Combine the cheese mixture in a medium bowl. Place two tortillas side by side, then sprinkle with a quarter of the steak, jalapeños, and cheese mixture. Top with another tortilla and gently press down. Carefully slide the quesadillas onto the grill, cover, and cook until the cheese is melted and the tortillas are crispy, about 3-4 minutes total. Flip and repeat until the bottom tortillas are crispy, about 2-3 minutes more.
