Ingredients:

  • 1 bunch kale, washed and tough stems removed (about 7 ounces)
  • 1 bunch spinach, washed and tough stems removed (about 5 ounces)
  • 2 medium garlic cloves, peeled
  • 3 tablespoons toasted pine nuts
  • 4 teaspoons balsamic vinegar
  • 1/2 cup olive oil

Instructions:

  1. Bring a large pot of salted water to a boil and prepare an ice water bath.
  2. Add kale and spinach to the boiling water and cook until wilted, about 2 minutes.
  3. Remove the greens from the boiling water and plunge into the ice bath.
  4. Once cool, remove the greens from the ice bath, shake off excess water, and place in a food processor.
  5. Add garlic, pine nuts, and vinegar, and slowly pour in the olive oil while puréeing.
  6. Continue puréeing until smooth, about 4 minutes.
  7. Season with salt and serve.
