- 1 cup all-purpose flour

- 2 large eggs
- 1/4 cup milk
- 3 tablespoons unsalted butter
Preparing the Dough
Combine flour, salt, pepper, chives, thyme, oregano, and 1 tablespoon of parsley in a large bowl. In a separate bowl, whisk eggs and milk together. Create a well in the flour mixture and pour in the egg mixture. Gradually incorporate flour into the eggs until a smooth, thick dough forms. Let it rest for 10-15 minutes.
Cooking the Spaetzle
Bring a large pot of salted water to a boil, then reduce the heat to a low simmer. Place a large-holed colander over the simmering water. Using a rubber spatula or ladle, push the dough through the holes into the water, cooking for 3-4 minutes. Cook each batch until the spaetzle float to the surface, gently stirring to prevent sticking. Transfer the cooked spaetzle to a larger strainer or clean colander to drain, rinsing with cold water. Repeat until all the batter is used.
Crisping the Spaetzle
Melt butter in a large frying pan over medium-high heat. Add the cooked spaetzle and cook, tossing to coat evenly, until at least half are browned, about 8 minutes. To serve, sprinkle with the remaining 2 tablespoons of parsley.
