  • 4 boneless chicken breast halves with skin (about 8 ounces each)
  • Kosher salt and freshly ground black pepper
  • 4 large, thin slices of prosciutto
  • 4 to 6 ounces of Fontina cheese, sliced thin
  • 2 tablespoons of olive oil
  • 6 tablespoons of unsalted butter
  • 1 shallot, finely chopped
  • 1 pound of sliced cremini or wild mushrooms
  • 2 teaspoons of chopped fresh thyme leaves
  • 1 cup of chicken broth
  • 1/2 cup of dry white wine

To begin, season the chicken breasts with salt and pepper. Then, lay them out boned side up on a work surface.
