Fresh Twist on a French Favorite: Mustardy Carrot Slaw

On a recent trip to France, my sister fell in love with the popular mustardy carrot slaw found in most grocery stores. However, she soon discovered that the store-bought version can be too soupy and acidic. That’s why I created a recipe that offers a perfect balance of flavors, with a hint of vinegar and a burst of orange zest.

Easy to Make, Delicious to Eat
With a total preparation time of just 25 minutes, this recipe is a breeze to make. Simply grate the carrots, whisk together the remaining ingredients, and combine. Let it marinate for at least 15 minutes, and you’re ready to serve.
Ingredients
- 2 pounds carrots, peeled and ends trimmed
- 5 tablespoons country-style Dijon mustard
- 1/4 cup extra virgin olive oil
- 1/4 cup finely chopped fresh Italian parsley
- 3 tablespoons minced fresh chives
- 3 tablespoons red wine vinegar
- 2 teaspoons orange zest (from 1 medium orange), lightly packed
- 1 1/2 teaspoons kosher salt
Preparing the Slaw
To begin, fit a food processor with a grating blade. Feed the carrots down the tube to grate them, or alternatively, use a box grater with large holes. You should end up with around 6 cups of grated carrots.
Next, whisk together the remaining ingredients in a nonreactive mixing bowl until they’re evenly blended. Add the grated carrots and, using clean hands, toss them together until they’re well coated. Season with freshly ground black pepper to taste.
Let it Marinate, Then Serve
Allow the slaw to marinate for at least 15 minutes before serving. This will enable the flavors to meld together perfectly, resulting in a deliciously tangy and refreshing side dish.
