Get ready to indulge in a tropical treat inspired by the Filipino dessert, halo-halo. This unique fusion of flavors and textures is now transformed into a refreshing ice pop.
Gathering Essential Ingredients and Tools
To create these one-of-a-kind pops, you’ll need:
- Freezer pop molds
- Frozen grated ube (purple yam)
- Heavy cream
- Whole milk
- Granulated sugar
- Vanilla extract
- Unsweetened coconut milk
- Assorted fruits and add-ins (such as mango, banana, jackfruit, coconut gelatin, and mung beans)
Thawing and Preparing the Ube
Before starting, thaw the frozen ube in the refrigerator. This essential ingredient will give your pops their signature flavor and vibrant purple color.
Crafting the Ube Mixture
Combine the thawed ube, heavy cream, whole milk, and 1/4 cup of sugar in a small saucepan. Whisk over medium heat until the sugar dissolves, about 10 minutes. Then, transfer the mixture to a blender and purée until smooth. Pour the mixture into a heatproof measuring cup and stir in the vanilla extract.
Assembling the Pops
Divide the ube mixture among the pop molds, filling them halfway. Place the molds in the freezer until almost completely solid, about 2 hours.
Adding the Coconut Milk and Fruit Mix-In
While the ube mixture is freezing, prepare the coconut milk and fruit mixture. Whisk together the coconut milk and remaining 3 tablespoons of sugar until smooth. Stir in your preferred fruits and add-ins.
Finishing Touches
Remove the molds from the freezer and evenly divide the coconut milk mixture among the pops. Insert the sticks and freeze until solid, at least 6 hours.
